Thursday’s Dish
It seems like the month of February has been the month for Mexican recipes! Here’s another one submitted by Amy Ramsey. She found it in a magazine and says that it is very good and it looks super easy. Enjoy!
Taco Skillet Pie
1 lb. ground beef
1 can black beans with liquid
1 can petite-cut zesty jalapeno tomatoes
1 pkg. mild taco seasoning
1 pouch cornbread mix
(ingredients required to prepare cornbread mix)
Mexican blend cheese mix
Heat oven to 425. In a large oven proof skillet, cook beef over medium heat until browned. Drain fat. Stir in black beans, tomatoes, and taco seasoning. Bring mixture to a boil over high heat. Cook 1 minute.
Prepare cornbread according to package directions (do not cook). Spoon cornbread over hot taco mixture. Bake 15 minutes. Sprinkle with cheese and continue baking 5 min. or until cornbread is golden brown. Let cool 5 min. before serving.
