Thursday’s Dish

‘Tis the season for colds and the flu. Sadly, that time is once again upon us. I’m no doctor, although I have been referred to as Dr. Mom once or twice, but I can write a prescription for a natural, healing recipe that will whip you and your kids back into shape quickly if you’re sick. Continue reading for my miracle cure….

As I sat on the couch with my sick toddler’s head nestled in my lap, I thought about what natural remedies I could give to her. She had a high fever all week with no other symptoms. It was just a virus that called for plenty of rest, fluids and lots of extra mommy-cuddle time on the sofa. By Thursday- the fourth day into this sickness- I decided to make my famous Dr. Mom Chicken Noodle Soup to wipe that bug right out of her system. Lo and behold, she ate some for dinner that night and her fever broke several hours later. Oh yeah, Dr. Mom is good.

If you need some healing chicken noodle soup, try out this recipe:

Ingredients 

One Whole Chicken, cleaned out

4 Garlic cloves

2 Large to medium sized onions

Stalk of Celery

8 Carrots

7-10 Chicken Bouillon Cubes

1 Cup of Fresh Parsley

Salt and Pepper to taste

One bag of egg noodles

Directions

Place the whole chicken in a large soup pot and put enough water in to cover entire chicken. Chop onions and add with the garlic to the pot. Bring to a boil and let cook for about an hour or until the chicken is fully cooked. Once the chicken is cooked, remove from the boiling water carefully and place on a plate to cool. While the chicken is cooling, dice the carrots and celery (be sure to remove the leaves and ends of the celery before dicing), add to the water and continue to cook. You can reduce the heat at this point… no need for it to boil.  Once the chicken is cooled enough to handle, pull the meat off, break into chunks and add to the pot. By this time, the vegetables should be tender. Add the bouillon (I usually add a few, stir them in and then taste to see if it needs more). Chop the parsley and stir in. You can serve and then add salt and pepper or just add it to the entire pot depending on your preference.

Serve with egg noodles that are cooked according to the directions on the package.  Tip: Don’t put the noodles into the soup to store because they will get soggy. I put the noodles in a bowl and then ladle the soup on top of them. I always put’ the noodles in a separate container when storing it for the next day. And, by the way, this makes enough soup to feed a family of four for three days. How economical is that? Downside is that you will smell like garlic and onions but it sure beats being sick!
