Thursday’s Dish
I have no recipe for you today, ladies. I’m planning on ordering out for the rest of the week, so you know what type of week I’ve had! The past couple of days, I ‘ve found myself not really wanting to go spend more money on groceries because we have so much stuff already here at the house. Sure, it’s a bunch of random stuff, like chicken broth and green beans, but surely I could pull out a few dishes from the randomness in my pantry, right? Yep. Thanks to a nifty website called Supercook.com!
The website allows the user to enter the ingredients that they have, all the while showing what you can make with those random items as you enter them. I’ve used it now several times and ended up figuring out a way to make creamy pasta without all of the cream. Alright, so I lied. I do kind of have a recipe to share- it’s one that was inspired by a recipe I saw on Supercook and I just thought about sharing it with you as I was typing. I modify it each time I make it with whatever ingredients I happen to have on hand. I shop quite a bit at Costco, so we always have tons of organic pasta in our pantry. It makes for a really easy dinner! Here’s what you do:
Ingredients:
One bag of pasta
Veggies of any kind- I’ve used mushrooms, peas, artichokes, zucchini, onions… pretty much whatever you have.
Two cloves of garlic
Olive oil
1/2 to 1 Cup Parmesan cheese
Two eggs
One half cup of milk or half and half
Salt and pepper to taste
Basil, if you happen to have some
Directions:
Cook pasta according to the directions on the package. While pasta is cooking, sautee vegetables and garlic in olive oil. Set aside until the pasta is done. Once pasta is drained, in a large bowl, combine the pasta and vegetable mixture. In a separate bowl, beat the eggs and pour in the milk or half and half, add salt and pepper to the combination and pour into the bowl with the pasta- the pasta should still be hot at this point, which will cook the eggs. Grate some fresh Parmesan cheese on top of the pasta and stir it all up. You can cut up some basil and sprinkle that on top as well. Taste. Eat. Enjoy!
