Thursday’s Dish: CSAs and Cauliflower
Last year around this time, LiveMom posted about Finding a CSA. As my thoughts turn to fresh green beans and strawberries, and what part of my yard would be best to dig up (or not), I thought I’d revisit the idea by listing several local CSAs and sharing a few of their recipes.
It’s a natural fit for a CSA to have recipes on its website, or at least to recommend to the desperate caller who has no idea what to do with kohlrabi. I chose cauliflower because until I learned to roast it (see below), I was pretty sure my childhood opinion of it — bad, yucky and also gross — was spot on. However, there are many delicious preparations for it that don’t result in a soggy, stinky mess.
Here’s a list of several local CSAs/farm delivery services (not all of which have recipes on their sites):
Roasted Cauliflower
1 head cauliflower
Olive oil
Salt
Garam masala or curry powder
Preheat oven to 400 degrees. Cut cauliflower into florets, wash thoroughly in a colander and spread to dry on a towel. When relatively dry, put florets into a bowl and toss with olive oil. Place in a single layer in flat-bottomed pan with a lip (like a half-sheet pan). Sprinkle with salt and garam masala. Bake for 25-30 minutes, or until the top is lightly brown. (Go a little longer if you can’t easily pierce the stems with a fork.)
