Thursday’s Dish

I’ve had a very passionate affair with tofu over the past year. Yep, I could eat it daily, but only eat it a couple of times a month because my son thinks it’s gross. So this might not be a very family friendly dish, unless your kids are young enough to still eat anything you give them. Maybe, just maybe, you can trick the older ones into thinking it’s scrambled eggs with other weird stuff in it. A friend gave me this recipe a year or so ago and I completely forgot about it until last night. I had a block of tofu sitting in the fridge and felt like something other than tofu stir-fry. She found it on the Post Punk Kitchen and I have to say that it’s so good I could eat the entire pan (not so good for losing those remaining baby pounds). So if you are interested in making this- and then inviting me over for dinner- here’s the recipe for Scrambled Tofu.

The recipe is for Orange Blueberry Sweet Rolls and the photo of the finished product on her blog looks scrumptious!! Here’s the list of ingredients. Dough
4 tsp yeast
1/2 cup sugar
1/2 cup warm water
6 tbsp butter
3/4 cup warm milk
1/2 cup fresh orange juice
1 1/2 tsp salt
2 eggs
5 to 5 1/2 cups flour

6 tbsp butter
3/4 cup sugar
Grated zest of 1 lg orange
Grated zest of 1 lg lemon

Orange Crumb Topping
1/2 cup sugar
1/3 cup flour
1/4 tsp cardamom or nutmeg
Grated zest of 1 lg orange
3 tbsp cold butter

3 cups blueberries

  1. I should mention that I made the tofu scramble when visiting family and my younger cousin was convinced it was scrambled eggs. AND she liked the meal too :-)
