Thursday’s Dish

When we were in Italy last month we enjoyed a pasta dish that had salmon in it. It was during a village party that we had the pleasure of sampling this tasty dish of salmon, pasta, cream and some other secret ingredients. My nine year old enjoyed it so much that I knew I would have to try to make it once we got home. I found a recipe online and made a few changes to it. Here’s what I came up with:

Salmon Pasta

2 Tbsp Extra Virgin Olive Oil

Green Bell Pepper, diced

One Bunch of Green Onions, diced

4 Garlic Cloves, diced

1/2 cup Sherry

2 tsp. Taragon
AdvertisementHandful of Fresh Basil, chopped

Tablespoon of Dill

1/2 Cup Heavy Whipping Cream

2 Salmon Steaks without skin

Pasta- whichever you prefer or have on hand

Parmesan Cheese


Cook pasta according to directions on package. Combine first four ingredients and cook for 2-3 minutes on high heat. Reduce heat and add the next five ingredients. Cook for another 2 minutes. Add the salmon, turning to cook thoroughly. Once salmon is cooked, begin crumbling it in the pan. Add salmon mixture to the cooked, drained pasta and sprinkle with fresh Parmesan cheese over it.
