Want to shake your life up a bit? Bring some excitement back to the table? How about breakfast for dinner? Crazy concept, but it certainly gets those kids eating!
My son always gets so excited when I make breakfast for dinner, as do his friends. And, it’s simple! Here’s a recipe that’s hearty and tasty:
8 Eggs, beat with a little milk and sat and pepper
6 Slices of Bacon
1 Red Bell Pepper, diced
6 Green Onions, sliced thinly
Shredded Cheddar Cheese (or whatever kind of cheese you like)
Boil the potatoes in salted water until soft, but still a little firm. While the potatoes are boiling, fry the bacon in a large frying pan until crisp. Once the bacon is done, remove and crumble into small pieces, put back into the pan and add the potatoes, bell pepper and onions. You can add a little olive oil if it gets too dry. While the potatoes are cooking, use a spoon to break apart into smaller pieces. Cook until the potatoes get crispy brown and then add the eggs. Cook until eggs are done. Add cheese and serve!
