When Thursday rolls around in my house I just want to make something that is simple and mindless but also tasty. I am usually lacking inspiration and my family ends up eating the same old thing, usually something frozen and not so delicious. And, being so close to the end of the week, it’s just nice to not have to think too much about what’s going on the table.

Grandma’s Best Chili
1-11/2 lbs. ground meat (either beef or turkey or a combo of both)
1 large onion, choped
2-4 garlic cloves, minced
1 large can tomato juice
1 large can crushed/ diced tomatoes
1 Tbsp chili powder
1 Tbsp cumin
1 Tbsp paprika
Salt & pepper to taste
1/2 c flour
2-3 cans kidney or pinto beans, drained
1 small can green chilies
Brown ground meat on medium heat. Add onions and garlic, cook for 4 minutes, drain excess grease. Return meat mixture to a large pot, add flour and seasonings. Stir well to coat meat. Add tomato juice, canned tomatoes, beans and chillies. Stir well. Bring to a boil on medium heat, stirring often. Reduce heat to simmer for 20-30 minutes, stirring occasionally.
Serve with grated sharp cheddar cheese, chopped fresh onion, corn chips or oyster crackers.
